Venngage is an excellent site for creating stunning infographics, mind maps, and more.  Also, Venngage has an easy to use drag-n-drop interface, lots of templates, can be used for brainstorming, and is a great graphic organizer.

ProcessOn

ProcessOn is a new free site/app designed for creating collaborative diagrams.  Upon first signing up (neat feature allows you to create your own unique URL) users will notice that the interface very similar to most online diagramming programs/apps i.e. Inspiration.  ProcessOn is very user friendly and allows users to add: shapes, bubbles, text, images, colors, etc.  Best of all ProcessOn is collaborative in nature and ideal for student's working in groups on the same project (users of Google Doc's will feel right at home).  The social networking features allows users to share, collaborate, chat, and set privacy features all in real-time which is ideal for education.  Not only is this a great tool for creating diagrams but ideal for brainstorming, mind mapping, and creating flow charts.

Wiki MindMap

Wiki MindMap is a cool site for searching through wikipedia in a mind map style. All a user has to do is enter a term and results are returned in a mind map format.

WiseMapping is a great site for brainstorming and creating mind-maps. It has a very nice user interface and a nice polished look. Also, there are lots of web 2.0 components for sharing/collaborating mind maps.

Tutor2u-Wisdomap

Tutor2u-Wisdomap (say that 10 x's fast) is an excellent site I just found out about from the equally impressive blog ZarcoEnglish. This is a great site for making mind-maps specifically designed for education.

Slick Plan

Slick Plan is a brand new mind mapping site that I learned about from the excellent blog, Langwitches. What makes SP so great is its simplicity. It is designed to make beautiful looking site maps and flow charts, and that is exactly what it does. This is a very user friendly program that once a user gets registered can have a fully functional mind map w/in minutes.

Text 2 Mind Map

Text 2 Mind Map is a site I learned about from a trusted online resource, Skip Zalenraitis. After taking a look and testing it, I'm super glad that he found this, because it is a great great site.

T2MM is a site where users can type in their text and convert it to a mind map. It kind of resembles Inspirations built in diagram feature from a outline. Actually, that's exactly how I made the mind map below. I just typed in outline format and clicked generate, it's that easy.

One thing to keep in mind this site is still very new and being worked on, but it does seem to be an invaluable tool teaching students how to brainstorm and use mind maps.
